One of the best things about Texas – and one of the things people miss the most when they move away – is the great Texas cookin’. Texas food is a lot like Southern food…only bigger and better! We wanted to bring you one of our favorite recipes, a little off the beaten path – but oh, so great – Fried Dill Pickles!
Until the movie, Fried Green Tomatoes came out, not a lot of people had ever heard of fried Southern anything – except for Fried Chicken and Chicken-fried Steak. The bad thing about fried green tomatoes is that you have to have green tomatoes! Fried Dill Pickles are a little like those tomatoes but always available. A few restaurants now have them on the menu – but they’re a lot better if you fry ‘em yourself so here’s our recipe.
Fried Dill Pickles
Ingredients:
- 2 Cups Flour
- 1 Cup Water
- 4 Eggs
- 32 ounce Jar Dill Pickle Spears (unless you pickle your own – then they can be any shape you want!)
- Oil (enough to “deep fry” – since this is a Texas recipe and we aren’t afraid of fried food)
- Salt / Pepper to taste
Instructions – simple as pie:
- Rinse all the vinegar off the pickles and slice lengthwise into smaller spears.
- Beat egg with water.
- Roll pickles in flour, then dip in egg mixture. Dip once again in flour, making sure pickles are well coated.
- Fry pickles in hot oil until golden brown.
Serve with Ranch Dressing (another Texas favorite!)
One question you might have is “How do I know the oil is hot enough?” Mostly, it comes from practice but Texas women who have fried a lot of things will tell you to heat the oil and wait until it starts to look like it is “moving” in the pan. You can also sprinkle a bit of flour into the oil and if it bubbles, it is probably ready. When you drop your pickles into the oil, you should notice bubbling all around them. Wait a couple of minutes and turn over for an even coat. Be sure to drain well on some paper towels and serve right away with a side of some kickin’ honey mustard dipping sauce.
